The Alte Waldhimbeere of the delicate distillery Prinz from Hörbranz is another one of the ''Alten Sorten'', which became because of it's intense and fruity taste to a MUST HAVE of for every raspberry-lover.
For having the full aroma of the fresh forest raspberries, they are getting macerated (laid in alcohol). There are the taste and the raspberry arome getting solved. Afterwards the macerate gets distilled in copper pot stills at low temperature. The following doubble storage makes the Alte Waldhimbeere by Prinz so unique.
The fresh distilled schnapps gets storaged for many months in the so-called "Hafele" (Earthenware vessel) to have less sharpness. Unwanted taste notes are getting filtered out over the air exchange through the micropores in the stoneware. On the other hand can important taste nuances and aromas get developed. For the "finishing" follows the storage in an wood barrel which gives the schnapps it's gorgeous golden coloring and emphazises the fruit aromas of the raspberry.
