The taste of the sun-ripened apricots stays, while the temperatures at the burning progress get hold as low as possible. Only the heart of the doubble burning process, the so-called middle course, gets used for the production of the Alte Marille. The following doubble storage makes this Alte Marille by Prinz so unique.
The fresh distilled schnapps gets storaged for many months in the so-called "Hafele" (Earthenware vessel) to have less sharpness. Unwanted taste notes are getting filtered out over the air exchange through the micropores in the stoneware. On the other hand can important taste nuances and aromas get developed. For the "finishing" follows the storage in an oak barrel which gives the schnapps it's gorgeous amber coloring and emphazises the fruit aromas of the apricot.
