The different Malecon rums mature in oak barrels for up to 25 years. Due to the climate, a high proportion of the rum evaporates from the barrels every year. This requires a particularly good intuition and many years of experience in order to enable maturation over such a long period of time. The barrels of a vintage are regularly emptied, married and then put back into barrels where they can continue their aging process. This is the only way to guarantee the high quality and the right influence of the oak wood on the distillate.
