History
The White Oak Distillery (Eigashima) was founded back in 1888. Since 1919 it has been licensed to produce spirits. Built in 1984, today's distillery near Kobe, Japan, the distillery made a name for itself with the production of sake and shochu. Since 1984, White Oak whiskeys have been produced there every two months each year.

Production
The needed barley is imported from Scotland. The water the White Oak Distillery uses is taken from an underground source, which is also being used for the production of its sake. After the barley has been ground, it is mashed in 4 wash backs and distilled in two traditional pot stills .Until 2007, when the first single malt whiskey was produced, the White Oak Distillery only launched blended whiskeys.
The Storage
In the newly built warehouses of the distillery, maturing takes place in ex-bourbon barrels and ex-sherry casks. Due to the unique climate, with hot summers and cool winters, there is a high evaporation rate during the maturation process (fishing shark) which lies about 7% -8%. In Scotland evaporation is only about 2%, by comparison.
