The quince belongs to the rose family. It is differentiated between bitter apple quince and the milder pear quince. It's originally form Caucasus but got imported by the greeks to europe in the antiquity. The cultivation of the quince doesn't really matter anymore in Germany these days, even though one can make a really good fruit schnapps out of the solid, woody fruits.
The Quitten-Geist of the delicate distillery Prinz from Hörbranz is made out of apple- and pear-quinces. Before the meceration the pearly shell has to get rubbed off because of the bitter substances, to recive the highest possible quality of the distillate. The intense smell of citruses and it's fruity, tart-spicy taste distinguish the Prinz Quitten-Geist in it's strong aroma.
