Nose: powerful with clear notes, salt and sea aromas, flowers, spices, herbs, pepper
Palate: very strong, old and complex, slightly bitter end, low acidity, very fresh, salt, bitter almonds, bread, herbs
Finish: pleasant, fresh, almond aroma
Serving suggestion: Unique in combination with seafood and shellfish. Goes well with olives, ham or cashew nuts.
Serving temperature: Better if it is not too cold (10-12 ° C), but depending on the season it can also be a little chilled (8-10 ° C). Due to it being cooler, the sherry can lose its aromas and flavors.
Bodegas Tradición started bottling fino sherry in 2013.
This bottling takes place twice a year. In each case 3000 standard bottles and 500 Magnum bottles are filled with the noble wine once in spring and once in autumn in order to allow an almost perfect approximation to the same wine in different seasons.
The fino is fortified to about 15% vol. and aged for years under a thick layer of flor yeast before being bottled at an average age of 12 years.
Name: Fino Tradición
Grape variety: Palomino Fino 100%
Average age: 12 Years
Volatile acidity: 0,08g/l
Total acidity: 4,01g/l
Aging: Solera system in American oak barrels
Storage: If the bottle is unopened, this wine remains in perfect condition and improves over time. After opening the bottle, the wine remains in perfect condition for up to 12 months, provided that it is stored in a vertical position in a wine cooler or refrigerator.
Not a modern and typical fino. The permitted amount of alcohol is kept to a minimum, which is why the sherry becomes finer and more pleasant.
You can tell from the color, nose and palate that it is in no way losing quality. On the contrary: An excellent, aged sherry from Jerez.
