History

The Highland Park distillery has been Scotland's northernmost whiskey distillery for more than 200 years. It was built on a rise on the Orkney island of Mainland, above Kirkwall.

The story of the Highland Park Distillery began in 1798 when Magnus Euson set up a blacksmith's shop on what is today a shed.

Despite all efforts to hide his blacksmithing and the illegal smuggling, against the tax collectors and tax officials, Magnus Euson was arrested in 1825 and put in jail.

In the same year, Robert Borwick, who arrested Euson officials, had a distillery built and received his license in 1926.

The distillery remained family property until 1869, followed by some ownership changes until it became the property of James Grant (his father was manager of The Glenlivet) in 1890. Under his direction, the distillery was renovated and the number of stills doubled from two to four. Since then, two pear-shaped wash stills and two onion-shaped spiritsstills are standing in the stillhouse.

Most recently, the Highlandpark Distillery was acquired by Highland Distillers Co. Ltd. has been a part of the Edrington Group since 1999.

Production

The distillery gets its water from the Cattie Maggie's Quarry, a source under a rock, and is one of the few who still produce some of the needed malt (about 20 percent) in their own dairy. In their own Kilns, the malt with the peat from the nearby Hobbister bog is masted. The produced malt is then mixed with ungetorften malt from the mainland.

Then the barley malt is grinded from the old malt mill to grist and in the semi louder mash tun (mash tun) it is the starch (the sugar) washed out.

The Highlandpark distillery has 12 Douglas fir spruce wood fermenters, where the resulting wash is fermented before being distilled in the stillhouse. After distillation, the resulting malts are matured and stored in ex-bourbon and also in sherry casks.
