The taste of sun-ripened apricots is preserved by keeping the temperature as low as possible during the distillation process. Only the heart of the double distillation process, the so-called middle course, is used for the production of the old apricot. The subsequent double storage makes Prinz's Alte Marille so unique.
After distillation, the freshly distilled brandy is stored for many months in the so-called "Hafele" (earthenware vessels) in order to remove its sharpness. The air exchange through the micropores in the earthenware filters out unwanted flavours. On the other hand, important taste nuances and aromas can develop. "Finishing" is followed by storage in oak barrels. Not only does the schnapps receive its beautiful amber coloring, the fruit flavors of the apricot are highlighted even more.
