The taste of the sun-ripened apples is maintained by the temperature during the firing process is kept as low as possible. Only the heart of the double firing process, the so-called middle course, is used for the production.
To take the freshly distilled schnapps its sharpness, it is stored after the firing process for many months in the so-called "Hafele" (earthenware vessels). By exchanging air through the micropores in the stoneware, undesirable flavors are filtered out. On the other hand, important flavors and aromas may develop.
